Hey there. I just finished installing the TBS unify pro 5G8 HV VTX in my fossil 210 and unlocked all frequencies Now by unlocking all frequencies what does that really do? This unit goes up to 800mW. Does that mean I have more channels that my goggles will pick up? I'm

By unlocking all frequencies, you have probably made it illegal in your country.
Some frequencies work better for some setups in some areas, you might find one particular channel has lots of interference where you are and another has none or very little.
Higher power normally means more range (with the right antennas) but also means more power usage.
I try to use just enough to do the job, in some cases 50mw is plenty, others 200mw is not enough.

It's not illegal if you have a ham licensee. I figure since I had ham for Thanksgiving, I was legal No the wife has a ham radio licensee so I should be good. You mention interference, I guess I'll find out tomorrow with the antenna I have "Goggles and quad has Lumenier pagoda2" find out how it goes.

Higher MW on 5g8 yes will give you more range but more importantly will give you more penertration, DOG the unify get freaking hot, so be aware in the fsgx if it gets to hot it will thermally shut down, I would not go above 200mw unless its in airflow, my 2c

HAM license doesn't necessarily cover every frequency used on these things. A couple of channels on one of the bands do go out of legal range, even with a ham license. Can't remember which ones off hand. I'm going to be putting together some slides for a presentation on "drone" and FPV technology at my local HAM club so I'll chime back in when I get to doing the research.
